The persimmon (Diospyros kaki) is the economically most important Diospyros, which is grown for its fruit. The persimmon is a beautiful fruit tree that grows well in tropical areas although it can withstand the cold up to -17°C and you can keep it outside here in Belgium as well. Khaki is Native to Japan, China, Burma and northern India, Korea and Vietnam, in the mountains of Indonesia and the Philippines. Khaki is a deciduous fruit tree of the subtropics with beautiful pink flowers. The ripe fruits resemble tomatoes or oranges, The color of the fruits varies from pale yellow to orange-red. They are slightly larger than beef tomatoes and are harvested in the fall. Night frosts speed up the ripening process. When hard, even when already nicely colored orange-red, persimmon fruits contain very high levels of tannin, which gives them a particularly tart flavor. Therefore, the fruit must be post-ripened and softened: this completely removes the tannins and makes the fruit very sweet and aromatic. An exceptional source of provitamin A and vitamin C, it also provides potassium, iron, magnesium and calcium and, to a lesser extent, phosphorus and sodium.
