The sweet potato or sweet potato (Ipomoea batatas) is a plant in the vine family (Convolvulaceae). The sweet potato is a starchy tuber, a thickening of the roots. In Polynesia, it is called kumara.
The sweet potato is used in Surinamese cuisine, among other things. In the United States, it is traditionally on the menu for Thanksgiving Day as a yam. The tubers are peeled and boiled and usually served with spices as a side dish. In Canada, sweet potato fries are popular, called sweet potato fries.
Before 1500 AD, the main area of distribution of the sweet potato was in South America. From the 16th century, the plant was transferred by the Spanish to China, Japan, the Philippines and the Indonesian archipelago, where it soon became an important food.
